Ham, Broccoli, Cauliflower, and Cheese Casserole

Those of you who know me know that I really don’t prefer casseroles. However I was feeling a bit sick yesterday, so they are really good for throwing something together fast and are crazy easy to make. Maybe someday I’ll try and measure things out… But that day is not today! 😀

About 15 mins of veggie prep, trimming and cubing ham from bone, then toss everything together and chuck it in the oven until warm and bubbly, let it set for about 10 mins. We served it over a bed of baby spinach and it was fantastic!

Peri-Peri Chicken & Roasted Veggies

I was struggling to decide what to make for dinner last night and a good friend shared a recipe that inspired me to toss this all together. Thank you tkoblasz! Dinner was amazing 🙂

I want to get this out of the way first… I’m terrible at recipes. I rarely measure, I rarely time things in the oven, I never try to count macros or calories, I pretty much just wing it. I have found that most recipes can be pretty forgiving. This one is very forgiving. If you are hungry or have more mouths to feed, add more veggies & chicken. If you are just making a couple meals, add less veggies & chicken. Like I said, pretty forgiving.

To me, the secret to making good food taste great is in the quality of the seasonings. When I can, I try to buy good quality seasonings. There are several places online to buy quality seasonings in bulk which ends up being cheaper than most bottled stuff at local grocery stores. I get most of mine from Penzeys since we have one local and I love being able to visit, browse, and smell everything. This recipe is no different. Quality seasonings and a delicious Peri-Peri sauce from Trader Joe’s make this recipe really easy.
